- The Island already had a couple of those little bar-top ovens. That wouldn't quite do what we wanted but it would work for warming up some loaves if we par-baked them. I started making a list of the equipment that we needed to buy or rent. For now, the cash register would suffice. We just needed ovens and a warmer. There was already gas to the building, so we wouldn't need to wait on any utilities to be hooked up.
- I was confident that I could get the ovens and warmer within a week, so I actually started to feel a little better about the whole thing. Nicole already had the supply lists from the last two times we had done this. She would contact a food-service company and arrange for deliveries.
- We decided to plan for 80 loaves a day. We'd prep them the night before (on site) and store them in the refrigerator. We'd bake 20 at a time - 5 of each type - and then start a second batch as soon as half of the first batch sold.
